I make this hamburger rice casserole recipe on a cold wintry night; the kids love it!

Ingredients
1 lb. hamburger meat, cooked and drained ($3.29)
1 C. rice, uncooked ($0.70)
1 10 oz. can cream of mushroom soup ($1.00)
1 medium onion, chopped ($1.39)
6 Tbs. soy sauce ($0.72)
2 Tbs. brown sugar*
4 C. boiling water*
Salt and pepper to taste*
TOTAL COST: $7.10
Directions
Brown hamburger meat and chopped onion until hamburger is no longer pink and set aside. Pour boiling water over uncooked rice in a 2-3 qt. casserole dish. Add in cream of mushroom soup; stir until it is dissolved into water and rice. Next add soy sauce and brown sugar. Finally, add hamburger meat and onion and mix well. Bake in a 350 degree oven for 1 hour.

Ingredients
Casserole:
2 C. cooked chicken, cubed
9 oz. frozen mixed vegetables, slightly thawed
2 C. elbow macaroni, uncooked
1 C. American cheese, shredded
10 3/4 oz. condensed cream of celery soup
2 C. water
Topping:
1/2 C. plain bread crumbs
2 Tbs. margarine or butter, melted
Directions
In large bowl, combine all casserole ingredients; mix well. Pour into ungreased 8″ square (1 1/2 qt.) baking dish. Cover tightly; refrigerate 8 hours. Heat oven to 350 degrees. In small bowl, combine topping ingredients; mix well. Stir casserole; sprinkle with topping of 1/2-C. bread crumbs and 2 Tbs. margarine or butter, melted. Bake for 45 to 55 minutes or until bubbly and golden brown.

This is always a favorite at my dinner table. This is especially good for children.

Ingredients
1 lb. ground beef
1/2 medium yellow onion
1 10 oz. can condensed tomato soup
1 15 oz. can cut green beans
4-6 servings of mashed potatoes
1 C. shredded cheese (Colby, cheddar, American, etc.)
Directions
Cook ground beef and onion until beef is browned and onion is tender. Drain off fat. Combine soup and green beans with cooked meat. Heat on medium/low for 10 minutes. Pour beef mixture into very large pie pan. Top with mashed potatoes. Sprinkle with shredded cheese. Bake for 10 minutes at 350 degrees until cheese is melted.

Ingredients
1 32 oz. bag frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
1 1/2 C. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 tsp. salt
1 tsp. pepper (more or less to taste)
Directions
Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese. Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.

Ingredients
1/2 C. butter or margarine
1 20 oz. pkg. frozen broccoli, cooked and drained
6-8 boned skinned half breasts of chicken
1 10 3/4 oz. can cream of mushroom soup
1 envelope dry onion soup mix
1/4 C. shredded cheese
Directions
Melt butter in bottom of 13×9x2-inch baking pan. Combine soups with broccoli. Rub chicken with additional butter; sprinkle with salt. Lay chicken over broccoli mixture and top with cheese. Bake in 350 degrees for 1 1/2-2 hours or until chicken is tender.
Yield: 6 servings

Ingredients
1 Tbs. butter
4 skinless, boneless chicken breasts halves
1 6-oz. box Pepperidge Farm® One Step Stuffing Chicken Mix
1 10 3/4-oz. can Campbell’s® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 C. milk
1/2 C. shredded Cheddar cheese
Directions
Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook for 15 minutes or until it’s well browned on both sides and cooked through. Remove the chicken from the skillet. Prepare the stuffing in the skillet according to the package directions except let stand for 2 minutes. Return the chicken to the skillet. Stir the soup and milk in a small bowl. Pour the soup mixture over the chicken. Sprinkle with the cheese. Cover and cook over medium heat until the mixture is hot and the cheese is melted.

Ingredients
2 C. mild picante sauce
1/4 C. vegetable oil
2 Tbs. lime juice
4 cloves garlic, minced
1 tsp. cumin
1 tsp. dried oregano
1/2 tsp. Salt
4 skinless, boneless chicken breasts
Directions
Preheat grill or broiler. Mix picante sauce, oil, and lime juice in a bowl. Add garlic, cumin, oregano, and salt; stir. Reserve 1 C. of marinade; set aside. Pierce chicken on both sides with a fork. Place chicken in a resealable plastic bag. Pour marinade over chicken; squeeze air out of bag and seal tightly. Toss chicken to coat well. Refrigerate for about 5 minutes, drain. Grill chicken over medium heat, turning and basting frequently with 1/2 reserved marinade for 20 minutes or until cooked through. Heat remaining marinade and serve along side chicken.

1/2 C. grated Parmesan Cheese
8 chicken cutlets, pounded
1 1/2 C. Italian flavored breadcrumbs
1 – 1 1/2 C. prepared tomato sauce
1 ball smoked mozzarella (or buffalo, no salt), cut into 1/4-inch slices
drizzle of canola oil
Directions
Place pounded chicken cutlets in plastic bag with dressing in refrigerator for at least half an hour but not more than 1 hour.
